The Specific Carbohydrate Diet has been a lifesaver for my daughter. She suffered with chronic tummy pain even after following a strict gluten free diet post celiac disease diagnosis. Her tummy troubles didn’t cease until we went on the SCD diet (grain free, starch free, refined sugar free). At first it was miraculous the complete recovery. Now she does still have flairs and troubles from time to time but before the SCD diet it was a daily chronic battle that plagued us all. Read more about her SCD journey here.
One of our family favorite meals is pizza. I had tried the cauliflower pizza crust, but she was not a fan, some almond flour crust, but she didn’t like that either. I actually gave up on trying to make an SCD pizza. Then my SCD support group was going crazy for this meat pizza crust! The recipe they were following has cheese in the recipe, it is found here at Not Crocker. I was able to change it up a to make it dairy free and alas my girl has pizza she loves!! Since then I have made it about 10 times in a couple months.
- 1 Pound Raw Ground Turkey
- 1/4C Coconut Flour
- 3 Eggs
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic Powder
Mix everything up with your hands in a big bowl. Get pizza tray or a cookie sheet covered with foil & oil the foil. Spread the crust out evenly. Cook at 400 for about 15-20 minutes. I cook the crust all the way and then add my warmed red sauce and warmed toppings. Mikayla’s topping of choice is bacon!
